Spinach and Feta Quesadillas (20 minutes)

These Spinach and Feta Quesadillas are a delicious and easy meal perfect for any time of day! Packed with fresh spinach, creamy feta, and melty mozzarella, they're a flavorful twist on traditional quesadillas. With just a few simple ingredients and a quick cooking process, you can whip up this tasty dish in under 20 minutes. Serve with sour cream and salsa for an extra kick. Perfect for lunch, dinner, or a quick snack!

Ingredients
  

2 cups fresh spinach, roughly chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1 clove garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Optional: sour cream and salsa for serving

Instructions
 

Prepare the Spinach Mixture:

    In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and oregano.

      Assemble the Quesadillas:

        In a large bowl, combine the sautéed spinach mixture, feta cheese, and shredded mozzarella. Mix until evenly combined.

          Cook the Quesadillas:

            Preheat a non-stick skillet or griddle over medium heat. Place one tortilla on the skillet and fill half of it with the spinach and cheese mixture. Fold the tortilla in half to cover the filling.

              Grill the Quesadilla:

                Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

                  Serve:

                    Cut the quesadillas into wedges and serve warm with sour cream and salsa, if desired.
