2 large red onions, thinly sliced

4 tablespoons olive oil

2 tablespoons sumac

1 tablespoon honey or maple syrup (optional for sweetness)

1 teaspoon sea salt

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the thinly sliced red onions with sea salt. Let them sit for about 15 minutes to soften and release some of their moisture.

    While the onions are sitting, in a small bowl, whisk together the olive oil, sumac, honey (if using), and fresh lemon juice until well blended.

      After the onions have rested, drain any excess moisture that may have accumulated. Rinse lightly under cold water if desired, then return them to the mixing bowl.

        Pour the sumac dressing over the onions and toss well to coat them evenly.

          Let the mixture marinate for at least 30 minutes at room temperature, allowing the flavors to develop. For a more intense flavor, refrigerate and let it sit for a few hours or overnight.

            Before serving, give the onions a gentle toss, and garnish with fresh chopped parsley for added flavor and color.
