Ingredients
  

2 cups cooked and shredded chicken breast

1 cup cherry tomatoes, halved

1 cup corn (fresh, frozen, or canned)

1 cup diced bell peppers (red, yellow, and green for color)

1 avocado, diced

1/2 cup red onion, finely chopped

1 cup black beans, rinsed and drained

1/4 cup fresh cilantro, chopped

1/2 cup shredded cheddar cheese

1/4 cup crumbled queso fresco (optional)

1/2 cup sour cream or Greek yogurt

1/4 cup mayonnaise

2 tablespoons lime juice

1 tablespoon taco seasoning

Salt and pepper, to taste

Tortilla strips or crushed tortilla chips (for garnish)

Instructions
 

In a large bowl, combine the cooked and shredded chicken, cherry tomatoes, corn, diced bell peppers, avocado, red onion, black beans, and cilantro. Toss gently to mix.

    In a separate small bowl, whisk together the sour cream, mayonnaise, lime juice, taco seasoning, salt, and pepper until smooth and creamy.

      Pour the dressing over the chopped chicken salad mixture, and mix well to ensure everything is evenly coated in the dressing.

        Fold in the shredded cheddar cheese and queso fresco (if using). Taste and adjust seasoning as needed.

          Let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld.

            When ready to serve, give the salad a gentle toss, and garnish with tortilla strips or crushed tortilla chips for added crunch.
