Ingredients

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup milk (or plant-based milk)

1 large egg

2 tablespoons melted butter (or vegetable oil)

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

Maple syrup or chocolate sauce (for serving)

Instructions

In a large mixing bowl, sift together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined, being careful not to overmix. If desired, stir in the chocolate chips.

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

For each pancake, pour about 1/4 cup of batter onto the skillet. Cook for 2-3 minutes until bubbles form on the surface and the edges look set.

Flip the pancakes and cook for an additional 1-2 minutes until the other side is cooked through. Repeat with the remaining batter, greasing the pan as needed.

Serve warm with maple syrup or chocolate sauce drizzled on top. Enjoy your deliciously fluffy chocolate pancakes!
