12 oz penne or rigatoni pasta

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, diced

Salt and black pepper, to taste

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup baby spinach

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Cook the Pasta: Begin by cooking the pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Season the diced chicken with salt and black pepper. Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Cook the Aromatics: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the sun-dried tomatoes and cook for an additional 2-3 minutes.

        Make the Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Add the Italian seasoning and let the mixture simmer for 5 minutes until slightly thickened.

          Combine Ingredients: Return the cooked chicken to the skillet along with the baby spinach, stirring until the spinach wilts. Gradually mix in the grated Parmesan cheese until melted and smooth.
