Ingredients

2 lbs ground beef

1 cup mashed potatoes (freshly made or leftovers)

1 cup shredded cheddar cheese

1/2 cup cooked bacon, chopped

1/2 cup finely chopped green onions

1/2 cup milk

1/2 cup breadcrumbs

1 large egg

2 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1/4 cup barbecue sauce (for glaze)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper or lightly grease it.

Prep Meat Mixture: In a large bowl, combine the ground beef, mashed potatoes, shredded cheddar cheese, chopped bacon, chopped green onions, milk, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.

Mix Ingredients: Use your hands or a spatula to mix all the ingredients until well combined. Be careful not to overmix as it can make the meatloaf tough.

Shape the Meatloaf: Transfer the meat mixture into the prepared loaf pan, pressing it firmly to shape it into a loaf.

Add Glaze: Brush the top of the meatloaf with the barbecue sauce, spreading it evenly over the surface.

Bake: Place the loaf pan in the preheated oven and bake for 1 hour or until the meat is cooked through and reaches an internal temperature of 160°F (70°C).

Rest: Once cooked, let the meatloaf rest for about 10 minutes before slicing. This helps to keep it moist.

Serve: Slice the meatloaf and serve warm with extra mashed potatoes or your favorite side dishes. Enjoy your ultimate loaded potato meatloaf!
